How do mathematicians know infinity?

To Thales the primary question was not "what do we know", but "how do we know it."

The prejudiced mathematicians may claim to know infinity and even teach to students.

The primary question is how do they know it?

How do they know to construct infinite sets?
How do they know cardinality of infinite sets?
How do they compare infinities?
Surely, infinity must be finitely defined to do all those constructing, counting and comparing.
