How do western sciences accept objective relativity after Galileo's suggestion?

real knowledge, real objective world, real laws of objective world, etc are the sole/belief/precondition of western sciences.

Galileo was punished by the church for suggesting 'observation is relative' by saying 'Earth move around the Sun'.

'objective relativity' shook the 'objective real' foundation of western sciences.

'relative observations' shifted 'western sciences' into 'relative sciences', degrading the credibility of 'real' belief of existence.

How do western scientists cope with such instability?
Can they enjoy making sand castles, where the tide can wash them off easily?
